I'm going to add a second 12 volt socket to my 2018 ES. I understand that the stock 12 volt socket is fused to about only 2 AMPS. I want to be able to power an air compressor. Please can you provide some additional information and pictures if possible about the wiring details, that is the power source from the fuse panel area.
I'm a little "thumbs" when it comes to wiring.
Finally, I only want power to these sockets when the ignition key is on.

Sure,
I like to use a marine 12V water proof female socket you can buy anywhere. Similar to the one that I posted a picture of on the left, not the new one. I have both of mine on 'constant' power due to the fact I like to charge my phone or other devices while I set up the camp site and the bike is not 'on'. You can easily have this still a heavy duty 12V on switched power but you will have to wire in a relay of a switched power source. I like to use the low volt ignition on power source from the two plugs provided for the factory driving lights that are rarely used. This has a nice 'ignition on' power.
When picking up your supplies, make sure to pick up one or two water proof relays. 4-5 pin 20/30A will work fine. I think my 'compressor' socket is on a 15/20A fuse. So I can basically run anything I want. The new USB is on a 10A.
If you want it set up like mine, you run the wires to the battery or your fuse block. If you want it only to be used with 'ignition on', you just install the relay and it will work with ignition on.
