Of the two choices you mentioned, the Hinton route is going to be more scenic.
I'll be heading north from Rocky Mountain House on Hwy 22 and picking up Hwy 43 at Mayerthorpe, then Grande Prairie, Dawson Creek, etc. But then I live here and the Icefields Parkway is in my backyard. If you want gravel, take the Forestry Trunk Road as was suggested, but it will be slow going and it's not going to be fun if there's any rain. You can get on the south end near Canmore or pick it up west of Nordegg and just take the north section.
The Icefields Parkway is a major scenic attraction and it would be a good idea to go from Banff North all the way through to Jasper, Hinton, Grand Cache, Grand Prairie but there's also the option to head for Rocky Mountain House and take the David Thompson Highway - Hwy 11 through Nordegg to North Saskatchewan River Crossing, then north to Jasper from there. Hwy 11 and the Icefields Parkway is an awesome route for scenery and still takes you over the Columbia Icefield. Both these routes are asphalt.
I'm taking the direct route as I don't have the luxury of time and I'll be travelling two-up. If you have time definitely take the Icefields Parkway one way or the other.
