I just installed a set of Mitas E07 and have read conflicting posts about tire pressure. The original E 07 supposedly had a 33lbs Max pressure. This new generation has a 40lbs Max. I'm coming off a set of Anakee 3's which I ran at 34 front 36 rear. Anyone have a suggested pressure for these tires. These are not the Dakar series.

Looking for the exact same answer. The change in max pressure listed on the sidewall is very new. Even mx1 does not have their website updated to show the new max pressures.

Spoke to Dave at Motorace and he's waiting to here from company. Increase in Max pressure is related to the new design with the center bar. I'm running 34.5 F 36 R. His suggestion was use what the manual suggests which I believe is 33 f 36 R

And these recommendations are for "road" as opposed to off road? Are they recommending running the same pressure dirt or road? I'm a noob when it comes to dual purpose tires…

I think it depends on the type of off road you're talking about. Fire roads and gravel would be the same. More intense terrain would be less. More experienced riders than myself would be a better source of info.

Note that the max pressure on a tyre sidewall is about the pressure which it needs to carry its max load, not what the max pressure is that it can sustain. The sidewall markings are not always clear in this respect unfortunately.
