For me personally. I'm way more comfortable on 50/50. Even when there is very little dirt, they just give me that extra bit of confidence, I started using them on my Quebec trip. Which was mostly asphalt. But on those sections of loose gravel I was glad I had them. I have used the 705's and they as you said are nervous on loose gravel.
MIMSEY you are a very smart man!! I'm in the same boat and opinion as you. I have had horrible experiences with smooth tires in the dirt. Yes the knobby tire life sucks. But what a great feeling to just peel off the pavement and ride knowing you have the best traction available.

I have tried the 20/80 tires and they really don't work well for me, I'm finding the 50/50's suit me better. That being said, there are higher skilled riders that would have no problem with 20/80's . But for me the Grip when I decide to explore is worth every penny.
