Those that buy a 'new' bike will relate. The new bike comes with very basic, cheap almost crappy stock parts.
What do most riders do? Keep the parts and replace on the bike when (or if) the bike is sold in future? or just sell them off as soon as ?

Main items:
Plastic engine guard
plastic 'hand guards
luggage rack
levers (brake/clutch)
shift lever
brake pedal
etc etc

I always keep all the take off parts. The day may come when you decide to trade it in. The dealer isn't going to give you anywhere near what your accessories are worth on trade. You can return the bike to stock, sell the accessories or transfer most of them to your new Super Tenere. A private sale is a little different, most potential buyers know the cost of the accessories and you can work that into the sale price. Also, when I look at used bikes, I like to get the take off parts. The parts you have listed really aren't worth much, but a spare lever or brake pedal might come in handy someday.

I've kept all of mine. When I traded my V-Strom, I took all the accessories off and sold them separately, and put the OEM parts back. Right now I have a box in my garage with the original luggage rack, side crash protectors, etc from the Super Tenere. It seems unlikely that I'd trade in my S10 at this point with almost 100,000 miles, but if I sold it outright, I'd take off the aftermarket crash bars, skid plate, etc and probably sell them on here, and put the OEM parts back on. They'd be worth a lot more sold individually on here than they would be to someone buying a high mileage Yamaha.

I always keep any parts that may be replaced with aftermarket. I my case I never know if the bike goes down and I may need a replacement part after the fact.
When it comes time to get rid of the S10, the new owner gets the parts with it.
I always look at added components as value lost, what I like doesn't mean anyone will like or cares. I do the changes for myself and my needs.
I have put some stuff for sale in the past but in most cases it ends up being a waste of time.

I keep parts and they go with the bike if/when I sell it later, like lund.
I absolutely hate the process of selling stuff - If I have something valuable enough to not just give away, I price it to sell fast and with no room for negotiations.

My problem is, ME.
My wife has learnt a long time ago I can't leave well enough alone. The need to modify is an addiction and if I tried to sell everything that I went and modified I would spend a lot of time putting up adds and waiting for people.
She is amazed that I haven't tried to modify her yet. LOL
Because,
The bike's
The car
The truck
The boat
The snowmobiles
A few Rifles
All modified, I left the dog alone though. Thats just a few big things.

I never through anything away unless it totally used up. I don't modify/change something for the sake of change. There has to be a substantial improvement. "If it ain't broke, don't fix it". And the "juice has to be worth the squeeze". Last, but not least, "function over form".

Another that keeps everything with the aim that it goes back on to sell and the accessories get sold seperately unless I’m upgrading to a newer model that can use the same accessories.
The Givi Airflow screen cam in a decent sized box so so far everything thats come off has gone inside that.

Yep...keep them until you decide to sell your bike then swap all the after market upgrades with OEM parts before selling it. Then sell the 'good' parts to get some returns on your investments.

I always keep all parts. Anytime you may need this one because anytime it goes down I prepared my backup. I love to collect original luggage and I have a huge collection of my ones and also my favorite ones.
