It's nice to know your fan is still working right. You know, even with additional cooling of the oil the engine will still reach operating temperature causing the fan to come on. Later maybe, but still there.

Shutdown and walk away.
If you wanted to something good for your motor, have the computer reprogrammed so the fan comes on at a lower temperature. It will make the fan come on more often but will keep the engine cooler.

This is a true "Don't worry about it" item. The bike's been in production for more than 11 years and ridden in every desert of the world. We have a number of owners in the US who live in the desert, more in Mexico, a bunch of Australians, and at least one or two in UAE. Your use in Israel is not an extreme case.

Yes, the fan keeps going and that is OK.

She works as designed. Going down the road, with the display show 100F for air temp, and the coolant temp at 172F. Even around town the fan doesn't come on. The fan won't come on until I have to sit in traffic..
