After consuming a glass of Shiraz and a bowl full in my vaporizer (thank you Mr. Trudeau), I made my way into the kitchen and pondered what to prepare.
This recipe realized itself in my consciousness and fell together so effortlessly, I swear it was snatched from the cosmos and I had nothing to do with it.

Roasted Cauliflower Casserole

Place separated cauliflower florets in an appropriately sized casserole dish
Dab with generous amount of butter
Add 1/4 C finely chopped shallots or onion
Sprinkle with a minimal amount of fine bread crumbs
Add your favourite spice (1/4 teasp. cayenne pepper for me)
Top with a thin coating of grated old white Cheddar and / or Parmesan cheese

Bake at 350 F for 45 minutes, last 10 uncovered.
