What to do with leftover be rice and filet Odocoileus?


Make the sauce. I may have used last summers raspberries for blackberries and orange juice for red wine. Strained out the seeds and cooked it down some more. Steamed some antiviral cruciferous vegees.

No pics b/c as per usual I overdid the sauce so the plate looked like it was shot with a red wine cannon but taste evaluation...

Anyone in this post willing or 'wanting' to post your recipe for your items you have posted? (or other good meals you suggest) Looks like we have a few food people on here, and I personally would like to try a few of these "pictures"....... It will take a bit of time and effort.

Any interest ?


I recently picked up a "ADV" type cook book from one of the back county ADV JEEP guys. Its a self published cook book that I highly recommend. He is already working on his second cook book and I WILL be picking it up. You can find him on Face Book, his name is Marco Hernandez (ovrlndx). I suggest picking up his little cook book and look him up on You Tube.

If anyone wants a recipe for something I have posted, either post the request to the thread or PM me and I can share that. I have just posted pics of the recipe page in the past, as well as outlined the meal. Sometimes sites like www.cooks.com will have recipes that we can just link to to share.

No pics, boring dinner of protein and veggies. (Grilled Steak and steamed Cauliflower) I did nail the rare steak with a nice char on both sides though. :)

Love the stove upgrade. Dual fuel is the bomb. Electric oven is sooo much more consistent and cooktop with gas gives you instant heat. We cook and bake, so also have a dual fuel range. Got to like the front controls too. :D

Did the kilbasa and potatoes/carrots/peppers goodness again last night. So tonight was hash version of that, fine chopped with an egg tossed in and fried up it the pan with some green oinioins.

Tonight's may have been even better with the egg. Yummy with a little sour cream for the wife and ranch dressing for me.

You know how it goes, you check the freezer and spot that one thing you lost track of... for years. :eek:

So I found a lone Copper River salmon portion in the freezer. Uhh, we haven't bought any of that since before we moved in Sept of '18. And we hadn't actually bought any probably since close to this time in '18. It was the last portion of a great batch of salmon. It moved with us from Utah to Mississippi. I do NOT want to waste such a good piece of fish.

So I pulled it out and thawed it, then grilled it to perfection. but it's not enough as is for two. And all you married guys know what it would be like in the 'shelter in place' household if I ate that last piece of salmon myself for lunch and didn't give the bride any. Hell hath no fury like a woman deprived of yummy salmon! :D

So, we have a really, really good recipe for salmon cakes. I may have shared it before, but here is the recipe:

The 5 oz of Copper River salmon was perfect for doing a half recipe.
With everything except the egg:

Added one egg and made patties. A tad thicker than usual, but 4 patties worked great for dinner for two.

Need some veggies.... Hmm, just enough green spargel left for dinner:

Fried the patties up, got a nice crunch on the first side, (just prior to flipping here):

Dinner is served! Asparagus was steamed in the micro with some Butter Buds.

Palm Sunday backyard collected victuals.

Ramps fresh from Mother Earth.

Last year's ramp flower.

Washed up and ready for blanching.

One hour from ground to skillet.

Whitetail back stap marinating in OO, tyme, rosemary and garlic. Soon to be browned butter basted to perfection.

Garnished with raw ramplets and Jim's famous at my house stone ground meal cornbread. Chased with a citrusey IPA.

Topped off with my cream cheese Graham cracker jello mashup and a cuppa decaf.


We be waddlin'!!
