You know how it goes, you check the freezer and spot that one thing you lost track of... for years.
So I found a lone Copper River salmon portion in the freezer. Uhh, we haven't bought any of that since before we moved in Sept of '18. And we hadn't actually bought any probably since close to this time in '18. It was the last portion of a great batch of salmon. It moved with us from Utah to Mississippi. I do NOT want to waste such a good piece of fish.
So I pulled it out and thawed it, then grilled it to perfection. but it's not enough as is for two. And all you married guys know what it would be like in the 'shelter in place' household if I ate that last piece of salmon myself for lunch and didn't give the bride any. Hell hath no fury like a woman deprived of yummy salmon!
So, we have a really, really good recipe for salmon cakes. I may have shared it before, but here is the recipe:
The 5 oz of Copper River salmon was perfect for doing a half recipe.
With everything except the egg:
Added one egg and made patties. A tad thicker than usual, but 4 patties worked great for dinner for two.
Need some veggies.... Hmm, just enough green spargel left for dinner:
Fried the patties up, got a nice crunch on the first side, (just prior to flipping here):
Dinner is served! Asparagus was steamed in the micro with some Butter Buds.
